Roasted Vegan Cauliflower Soup

Cauliflower is high in fibre and other nutrients, such as B vitamins, which help your metabolism speed up. As it is anti-inflammatory, it is good for digestion, low in calories. It is essential to include it in your regular diet if you're attempting to lose weight 🍲

  • 1 piece Head of cauliflower florets
  • 1 Nos Sliced onion
  • 1 Nos Garlic head
  • 2 tbsp dill leaves or any other fresh herbs
  • 2 cups vegetable stock
  • 1-2 tbsp olive oil
  • Add a little quantity for extra taste. Salt and pepper


  • Mix together caulifower florets, sliced onions, herbs, slat pepper and 1 tbsp olive oil in a baking tray.
  • Chop the top part of the garlic bulb and place it in a foil, drizzled with olive oil. Cover and place in the centre of baking tray with cauliflower.
  • Bake all ingredients at 180C for 20 mins, tossing half way.
  • Remove garlic from the foil and squeeze the pulp.
  • Add the garlic along with other baked ingredients and grind to a smooth puree along with vegetable stock.
  • Heat the soup and adjust seasonings. Add lemon to taste.
  • Serve drizzled with olive oil and fresh herbs.
