Roasted Broccoli quinoa salad

Broccoli is a nutritious powerhouse packed with vitamins, minerals, fibre, and antioxidants. Combining it with Quionas, which is a great source of many essential elements like folate, magnesium, zinc, iron, fibre, and protein, makes for the ideal meal."

Ingredients
  

  • 1 cup Quinoa, cooked
  • 2 cup Roasted Broccoli
  • 2 cup Spinach chopped
  • 1 Onion, chopped
  • 1 tbsp Olive Oil
  • 1 Lemon, juiced
  • 1/3 cup Pistachios, chopped
  • 1/4 cup Feta Cheese, crumbled
  • Salt
  • Black Pepper

Instructions
 

  • Fill a big bowl with the 1 cup of cooked quinoa.
  • Add 2 cups of roasted broccoli, 2 cups of chopped spinach, 1 chopped onion, 1 tablespoon of extra virgin olive oil, and 1 chopped, juiced lemon.
  • Toss these ingredients together with a help of a wooden salad ladle
  • Crumbled 1/4 cup Feta cheese and 1/3 cup pistachios
  • Finish by adding salt and pepper. Enjoy a healthy meal!
