Roasted Broccoli quinoa salad
- 1 cup Quinoa, cooked
- 2 cup Roasted Broccoli
- 2 cup Spinach chopped
- 1 Onion, chopped
- 1 tbsp Olive Oil
- 1 Lemon, juiced
- 1/3 cup Pistachios, chopped
- 1/4 cup Feta Cheese, crumbled
- Black Pepper
- Fill a big bowl with the 1 cup of cooked quinoa.
- Add 2 cups of roasted broccoli, 2 cups of chopped spinach, 1 chopped onion, 1 tablespoon of extra virgin olive oil, and 1 chopped, juiced lemon.
- Toss these ingredients together with a help of a wooden salad ladle
- Crumbled 1/4 cup Feta cheese and 1/3 cup pistachios
- Finish by adding salt and pepper. Enjoy a healthy meal!
