Preparation time- 5 minutes 

Ingredients

  • Nut Milk: 250 ml (1 cup)
  • Avocado, peeled and chopped: 1 small 
  • Ripe pear, cored and chopped: 1 small
  • Ripe banana, sliced and frozen: 1 small
  • Flaxseed powder: 1 tsp (5 g)
  • Matcha pinch of cayenne: ¼ tsp

Method

  • Add all the ingredients to a blender or food processor and blend it thoroughly until it gets a smooth texture.
  • Now serve the perfectly balanced, delicious smoothie. 

Avocado Rolls With Peanut Sauce

If it’s the peak of summer and you are in the middle of your weight loss journey, it’s time to relish the avocado rolls with sweet and spicy sauce. It is one of the refreshing and light meals made with nourishing ingredients. The best thing about the recipe is it doesn’t require any hard cooking steps.

Servings- 3-4

Preparation time- 20 minutes 

Ingredients

  • Extra firm tofu, sliced: 100 g
  • Soy sauce: ¼ cup
  • Carrot, shredded: 1
  • Purple cabbage, shredded: ½
  • Avocado, sliced: ⅔ (40 g)
  • Fresh cilantro: As required
  • Rice paper: 1 pack
  • Avocado oil: 1 tbsp

Ingredients For Peanut Sauce

  • Peanut butter (home-made): ¼ cup
  • Soy sauce: 2 tbsp
  • Hot water: 2-3 tbsp

Method

  • Take a large pan and heat it a bit with oil.
  • Add the sliced tofu and cook it for 3 to 5 minutes, until both sides turn golden brown. Add the soy sauce and cook for around 3 minutes until each tofu gets coated. Set the pan aside.
  • Combine shredded carrot and cabbage and sliced avocados to get the filling ready. In a shallow dish, pour warm water halfway.
  • Soak the rice paper in warm water for 15 seconds and then remove it.
  • Add the mixture of carrots, cabbage, tofu, and avocados, and sprinkle cilantro in the middle of the rice paper. Fold the sheet from the bottom, cover the filling, and fold the sides before tightly rolling it up.
  • Now, to prepare the peanut sauce, add the rest of the ingredients into a bowl and whisk it thoroughly. Finally, add a splash of water to reach the desired consistency.
  • Garnish the sauce with sesame seeds before dipping the summer rolls.
