Procedure

  • Take a pan and add water, lemon juice, berries and vanilla essence. Cover the pan and bring it to a boil.
  • Cook without a lid for about 15 minutes. Smash the berries while stirring and let the mixture thicken.
  • For a smooth consistency, blend it. Add a couple of pinches of Xanthum gum and mix thoroughly to thicken the jam. 
  • Pour into a clean jar and refrigerate it.
