Drain the soaked chickpeas and pressure cook them with enough water for 3-4 whistles.
Heat oil in a pan and add cumin seeds, mustard seeds and fennel seeds.
When the seeds start to crackle, add green chillies, ginger-garlic paste and onion.
Saute for a few minutes until the onion turns golden brown.
Add tomatoes and cook for a few minutes until they become soft.
Add turmeric powder, red chilli powder, coriander powder and garam masala.
Mix well and cook for a few minutes.
Add the cooked chickpeas and mix well.
Add salt to taste and mix well.
Cook for a few minutes until the sabji is cooked through.
Garnish with chopped coriander leaves and serve hot.
