Heat 1 tablespoon of oil in a pan, add the vermicelli and roast it until it becomes golden brown. Remove from heat and set it aside.
In the same pan, heat the remaining oil. Add the mustard seeds and let them crackle.
Add the split black lentils (urad dal), green chillies, curry leaves, and onion. Sauté until the onion becomes golden brown.
Add the mixed vegetables and salt. Cover and cook until the vegetables are soft.
Add the water and bring it to a boil.
Once the water is boiling, add the roasted vermicelli slowly while stirring continuously to avoid lumps.
Cover and cook on a low-medium flame until the vermicelli is cooked and all the water is absorbed.
Garnish with freshly chopped coriander leaves and serve hot.
