First, clean and cut the vendakkai into thin slices.
Now, heat oil in a pan and add mustard seeds, on spluttering add urad dal and hing and sauté until it turns golden brown.
Next, add the chopped onions, green chilies and sauté until onions turn clear.
Then add the chopped tomatoes and spice powders (turmeric powder, chili powder, coriander powder) and salt, sauté well until the tomatoes cook nicely and raw smell goes away.
Now add the sliced vendakkai and mix everything well.
Sprinkle some water, cover and cook on low flame for 10-15 minutes.
Vendakkai recipes are generally served with roti or rice.
