Vendakkai, also known as okra or ladies finger, is a popular vegetable used in various cuisines around the world, particularly in Indian cuisine. It is rich in Vitamins, folate, antioxidants and dietary fiber making it a healthy addition to any meal. Vendakkai can be used in a variety of recipes such as stir fries, sambar, curry, and pickles.

First, clean and cut the vendakkai into thin slices.
Now, heat oil in a pan and add mustard seeds, on spluttering add urad dal and hing and sauté until it turns golden brown.
Next, add the chopped onions, green chilies and sauté until onions turn clear.
Then add the chopped tomatoes and spice powders (turmeric powder, chili powder, coriander powder) and salt, sauté well until the tomatoes cook nicely and raw smell goes away.
Now add the sliced vendakkai and mix everything well.
Sprinkle some water, cover and cook on low flame for 10-15 minutes.
Vendakkai recipes are generally served with roti or rice.
