Directions

Step 1:

Heat the olive oil in a large pot over medium heat. Add the onion, garlic, carrots, and celery and cook until softened, about 5 minutes.

Step 2:

Add the potatoes, vegetable broth, thyme, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.

Step 3:

Add the fresh vegetables, tomatoes, and parsley. Simmer for an additional 10 minutes, or until the vegetables are tender.

Step 4:
