Heat oil in a pan and add mustard seeds, cumin seeds, urad dal, chana dal, and ginger-garlic paste.
When the spices start to splutter, add the chopped onion and green chillies.
Saute for a few minutes until the onion turns golden brown.
Add the mixed vegetables and saute for a few minutes.
Add the sooji and roast for a few minutes until it turns golden brown.
Add the peanuts, cashews, and raisins and mix well.
Add the salt and 2 cups of water and mix well.
Cover the pan and cook on low heat for 10-15 minutes or until the sooji is cooked.
Serve hot with chutney or raita.
