long grain white rice

olive oil

2 tablespoons

onion, diced

cloves garlic, minced

mixed vegetables (such as carrots, peas, corn, and bell peppers)

vegetable broth

Directions

Step 1:

Rinse the rice in a fine mesh strainer until the water runs clear.

Step 2:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.

Step 3:

Add the mixed vegetables and cook for an additional 3 minutes.

Step 4:

Add the rice and stir to combine.

Step 5:

Pour in the vegetable broth and season with salt and pepper. Bring to a boil, then reduce the heat to low and cover.

Step 6:

Simmer for 20 minutes, or until the rice is cooked through and the liquid has been absorbed.

Step 7:

Fluff with a fork and serve. Enjoy!
