Wash and soak the basmati rice for 30 minutes.
Heat ghee and oil in a pressure cooker.
Add cumin seeds, bay leaves, green cardamoms, cloves and cinnamon stick.
Add onion and sauté till it turns golden brown.
Add ginger-garlic paste and green chillies and sauté for a minute.
Add mixed vegetables and sauté for 2-3 minutes.
Add red chilli powder, coriander powder, garam masala and salt and mix well.
Add the soaked basmati rice and mix well.
Add 2 cups of water and mix well.
Close the lid of the pressure cooker and cook for 2 whistles.
Once the pressure is released, open the lid and fluff the rice with a fork.
Garnish with coriander leaves and cashew nuts.
Serve hot with raita or curd.
