Rinse the rice and soak it in water for about 20 minutes.
Heat oil in a pan, add cumin seeds, ginger-garlic paste, and green chilies.
Add chopped onions and tomatoes. Cook till they are soft.
Now add mixed vegetables, turmeric powder, and red chili powder.
Add the soaked and drained rice to the pan.
Pour in 4 cups of water and add salt.
Cook on low heat until the rice is fully cooked and the water has evaporated.
Serve warm with raita or yogurt.
