Italian seasoning

1/4 teaspoon

vegetable broth

2 cups

(14.5 ounce) can diced tomatoes


ounces uncooked pasta (such as penne, fusilli, or rotini)




Step 1:

Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.

Step 2:

Add the diced vegetables, Italian seasoning, salt, and pepper. Cook until the vegetables are tender, about 5 minutes.

Step 3:

Add the vegetable broth and diced tomatoes. Bring to a boil, then reduce the heat and simmer for 10 minutes.

Step 4:

Add the uncooked pasta and cook until al dente, about 10 minutes.

Step 5:

Serve hot. Enjoy!
