1 small bunch
Cook the noodles according to the instructions on the package. Drain and rinse with cold water. Set aside.
Heat oil in a pan over medium heat. Add the garlic, ginger and fry until they turn aromatic.
Add the chopped spring onion, bell pepper and carrot. Cook until the vegetables are tender.
Stir in the soy sauce, vinegar, salt and black pepper. Cook for a minute.
Add the cooked noodles and toss well so that every noodle is covered with the sauce.
Serve the vegetable noodles hot.
