Heat oil in a pan over medium heat.
Add the onion, garlic, ginger and green chilli and sauté for a few minutes until the onion is softened.
Add the mixed vegetables and sauté for a few minutes until the vegetables are cooked.
Add the turmeric powder, red chilli powder, garam masala and salt and mix well.
Add the Maggi noodles and mix well.
Add 1 cup of water and mix well.
Cover the pan and cook for 5 minutes or until the noodles are cooked.
Garnish with chopped coriander leaves and serve hot.
