Heat the oil in a large pan over medium heat.
Add the mustard seeds, cumin seeds, cloves, cardamom pods and fennel seeds and fry for a few seconds.
Add the onions and fry until golden brown.
Add the tomatoes, potatoes, carrots, green peas and mixed vegetables and fry for a few minutes.
Add the coriander powder, turmeric powder, red chilli powder and salt and mix well.
Add 1 cup of water and bring to a boil.
Reduce the heat to low and simmer for 10 minutes or until the vegetables are cooked.
Add the freshly grated coconut, cashew nuts, raisins and chopped fresh coriander leaves and mix well.
Simmer for a few minutes and then remove from the heat.
Serve hot with chapatis or rice.
