Wash and soak the rice and dal together for 15 minutes.
Heat ghee in a pressure cooker. Add cumin seeds and let them crackle.
Add chopped onions and sauté till they turn golden brown.
Add ginger-garlic paste and sauté for a minute.
Add chopped tomatoes and sauté till they turn soft.
Add all the dry spices and mix well.
Add the mixed vegetables and sauté for 2-3 minutes.
Add the soaked rice and dal and mix well.
Add 2 cups of water and salt to taste.
Close the lid of the pressure cooker and cook for 2-3 whistles.
Once the pressure is released, open the lid and fluff the khichdi with a fork.
Garnish with coriander leaves and serve hot.
