Heat a skillet over medium heat.
Spread butter on one side of each slice of bread.
Place one slice of bread, butter side down, in the skillet.
Sprinkle grated cheese over the bread.
Top with chopped vegetables.
Sprinkle with salt and pepper.
Place the other slice of bread, butter side up, on top of the vegetables.
Grill for 3-4 minutes, or until the cheese is melted and the bread is golden brown.
Flip the sandwich and grill for an additional 3-4 minutes.
