Ingredients

Basmati rice

2 cups

chopped carrots

1 cup

chopped beans

1 cup

green peas

1 cup

large onions, sliced

2

tomatoes, chopped

2

ginger

1 tablespoon

garlic paste

green chillies, sliced

2

turmeric powder

1 teaspoon

red chilli powder

1 teaspoon

Biryani masala

2 teaspoons

Salt to taste

oil or ghee

2 tablespoons

Mint leaves for garnish

Directions

Step 1:

Rinse the rice under cold water until the water runs clear, then soak for 30 minutes.

Step 2:

In a large pot, heat the oil and add the onions. Cook until they are golden brown.

Step 3:

Add the ginger-garlic paste and green chillies. Cook for a minute.

Step 4:

Add the chopped vegetables, turmeric, red chilli powder, Biryani masala and salt. Cook until the vegetables are tender.

Step 5:

In a different pot, cook the rice until it's 70% cooked.

Step 6:

In the pot with vegetables, layer the partially cooked rice on top.

Step 7:

Cover the pot and cook on low heat for 20-25 minutes, until the rice is fully cooked and the flavors have melded together.

Step 8:

Garnish with mint leaves before serving.
