Soak the basmati rice in water for 30 minutes.
Heat ghee and oil in a large pot over medium heat.
Add bay leaves, cinnamon sticks, cardamom pods and cloves. Fry for a few seconds.
Add the chopped onion and fry until golden brown.
Add the garlic, ginger, cumin seeds, coriander powder, turmeric powder, red chilli powder and garam masala. Fry for a few minutes.
Add the mixed vegetables and fry for a few minutes.
Add the soaked basmati rice and fry for a few minutes.
Add the cashew nuts and raisins. Fry for a few minutes.
Add salt to taste and mix well.
Add 2 cups of water and bring to a boil.
Reduce the heat to low and cover the pot. Cook for 15 minutes or until the rice is cooked.
Garnish with coriander leaves and serve hot.
