Heat oil in a large pot, add the chopped garlic and ginger and sauté for a minute.
Add the chopped vegetables and sweet corn kernels and sauté for another 2-3 minutes.
Pour in the vegetable stock and bring the soup to a boil.
In a small bowl, make a slurry by mixing cornflour with some water.
Add this slurry to the soup, while stirring continuously to avoid lumps.
Add the soy sauce, black pepper powder, and salt, and simmer the soup for 5-6 minutes until it thickens.
Serve the veg sweet corn soup hot with some breadsticks.
