Heat a pan over medium heat.
Spread butter on one side of each slice of bread.
Place one slice of bread, butter side down, in the pan.
Sprinkle grated cheese over the bread.
Top with chopped tomatoes, cucumber, onions and capsicum.
Sprinkle salt and pepper to taste.
Place the other slice of bread, butter side up, on top of the vegetables.
Cook for 2-3 minutes, until the cheese melts and the bread is golden brown.
Flip the sandwich and cook for another 2-3 minutes.
Serve hot. Enjoy!
