Rinse the rice in a fine mesh strainer until the water runs clear.
Heat the oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the cumin, coriander, turmeric, garam masala, and salt and cook for another minute.
Add the rice and stir to coat with the spices.
Add the mixed vegetables and 2 cups of water. Bring to a boil, then reduce the heat to low and cover.
Simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
