Veg Pulao is a one pot rice dish made with basmati rice, mix vegetables, spices and herbs. It is a popular dish in Indian households and is often served with raita or a salad. basmati rice

2 cups


4 cups

chopped mixed vegetables (carrot, peas, beans, cauliflower)

2 cups

onion, sliced


green chillies, slit



1 teaspoon

garlic paste

cooking oil

2 tablespoons

cumin seeds

1/2 teaspoon

bay leaf




cinnamon stick

1 inch



Salt to taste



Step 1:

Rinse the basmati rice under running water until the water turns clear. Soak it in water for 30 minutes, then drain.

Step 2:

In a pressure cooker, heat the cooking oil and add the cumin seeds, bay leaf, cloves, cinnamon stick, and cardamoms. Saute for a minute until the spices release their aroma.

Step 3:

Add the sliced onion and slit green chillies. Saute until the onion turns golden brown.

Step 4:

Add the ginger-garlic paste and saute for a couple of minutes until the raw smell goes away.

Step 5:

Add the chopped vegetables and saute for a couple of minutes.

Step 6:

Add the soaked and drained basmati rice. Saute for a couple of minutes.

Step 7:

Add water and salt. Stir well.

Step 8:

Close the pressure cooker and cook for 2 whistles on medium flame.

Step 9:

Let the pressure release naturally. Once the pressure is released, open the cooker and fluff the rice gently with a fork.

Step 10:

Serve the veg pulao with raita or a salad.
