Take two slices of bread and spread a layer of grated cheese on one side.
Place the sliced vegetables on top of the cheese layer and sprinkle black pepper and salt.
Place the second slice of bread on top of the vegetables.
Heat a grilling pan and melt some butter.
Grill the sandwich on the pan until it's golden brown on both sides.
Take off the heat and cut into triangles.
Serve hot with ketchup or mayonnaise.
