Onion, finely chopped

Green Chillies, finely chopped

Ginger-Garlic Paste

2 teaspoons

Mixed Vegetables (Carrots, Beans, Peas, Cauliflower, etc.)

Red Chilli Powder

1 teaspoon

Coriander Powder

1 teaspoon

Turmeric Powder

1/2 teaspoon

Garam Masala

1 teaspoon

Fresh Coriander Leaves, chopped

2 tablespoons

Fresh Mint Leaves, chopped

2 tablespoons

Salt, to taste

Directions

Step 1:

Soak the basmati rice in water for 30 minutes.

Step 2:

Heat ghee and oil in a large pot over medium heat.

Step 3:

Add bay leaves, cinnamon sticks, cardamom pods, and cloves. Fry for a few seconds.

Step 4:

Add cumin seeds and fry for a few seconds.

Step 5:

Add onion and fry until golden brown.

Step 6:

Add green chillies and ginger-garlic paste. Fry for a few minutes.

Step 7:

Add mixed vegetables and fry for a few minutes.

Step 8:

Add red chilli powder, coriander powder, turmeric powder, and garam masala. Fry for a few minutes.

Step 9:

Add fresh coriander leaves and mint leaves. Fry for a few minutes.

Step 10:

Add salt and fry for a few minutes.

Step 11:

Add the soaked basmati rice and fry for a few minutes.

Step 12:

Add 2 cups of water and bring to a boil.

Step 13:

Reduce the heat to low and cover the pot. Cook for 15-20 minutes or until the rice is cooked.

Step 14:

Serve hot with raita or any other accompaniment of your choice.
