Varan is a traditional Maharashtrian dish made with lentils and vegetables. It is usually served with steamed rice or chapatis. The main ingredients of Varan are toor dal (split pigeon peas), turmeric, cumin, asafoetida, and salt. It is usually cooked in a pressure cooker and and then seasoned and boiled. It is often served with a dollop of ghee (clarified butter) and a sprinkle of freshly chopped coriander leaves.

Wash and soak the toor dal in water for about 30 minutes.
Heat the oil in a pressure cooker and add the cumin and mustard seeds.
When the seeds start to splutter, add the asafoetida and green chillies.
Add the soaked toor dal and turmeric powder and mix well.
Add 2 cups of water and close the lid of the pressure cooker.
Cook for about 3-4 whistles or until the dal is cooked.
Once the pressure is released, open the lid and add the freshly grated coconut and coriander leaves.
Mix well and season with salt.
Serve hot with steamed rice.
