Ingredients

eggplant (cut into cubes)

300 grams

oil

3 tablespoons

mustard seeds

1 teaspoon

split urad dal

1 teaspoon

cumin seeds

1 teaspoon

Curry leaves

large onions (thinly sliced)

green chillies

turmeric powder

1 teaspoon

red chilli powder

2 teaspoons

Salt to taste

Directions

Step 1:

Heat oil in a heavy-bottomed pan and add mustard seeds, urad dal, cumin seeds and curry leaves.

Step 2:

Once they begin to splutter, add the onions and green chillies. Cook until the onions turn translucent.

Step 3:

Add the eggplant cubes and stir well. Cook for 5 minutes.

Step 4:

Now add the turmeric powder, red chilli powder, and salt. Mix well.

Step 5:

Cover the pan and cook on a low flame until the eggplant is soft and fully cooked.

Step 6:

Serve the Vankaya Fry hot with rice or chapatis.
