Vada Pav is a popular street food from Mumbai, Maharashtra. It's often called as the 'Indian Burger'. The dish consists of a deep fried potato dumpling placed inside a bread bun sliced almost in half through the middle. It is served with a variety of chutneys like green chutney, garlic chutney and also a sprinkle of dry coconut powder mix. This spicy and flavourful fast food dish is enjoyed throughout the day but preferred especially during breakfast or evening snacks.

Mash the boiled potatoes in a large bowl.
Heat oil in a pan, add mustard seeds, curry leaves, asafetida, crushed green chillies and garlic. Sauté for a few minutes.
Add the sautéed spices to the mashed potatoes. Add salt, turmeric, garam masala and mix well.
Make small balls from the potato mixture and set aside.
Make a thick batter of gram flour with water, add red chilli powder and salt. Dip each potato balls in this batter.
Deep fry these dipped balls until golden brown.
Slather inside of the Pav with green chutney on one side and garlic chutney on the other.
Place the fried potato ball (vada) inside the Pav.
Serve hot with fried green chilli.
