Tori Sabzi is a popular curry in North India. It is made with a vegetable called tori, which is also known as ridge gourd. The vegetable is peeled and cut into thin slices, then cooked with spices such as cumin, coriander, turmeric, and chili powder. Other vegetables such as potatoes, onions and tomatoes are often added to this sabji for more flavour.The dish is usually served with chapatis or parathas.

Heat oil in a pan and add cumin seeds.
When the cumin seeds start to crackle, add the chopped onions and sauté until they turn golden brown.
Add the ginger-garlic paste and sauté for a few minutes.
Add the chopped tomatoes and cook until they become soft.
Add the red chilli powder, coriander powder, garam masala, turmeric powder and salt to taste.
Add the chicken pieces and mix well.
Cover the pan and cook on low heat for 10-15 minutes.
Add the chopped green chillies and coriander leaves and mix well.
Cook for a few more minutes until the chicken is cooked through.
Serve hot with roti or rice.
