Cook the rice in a rice cooker or pressure cooker, and spread it on a plate to cool.
In a pan, heat the oil and add the mustard seeds. When they start to splutter, add the urad dal and asafoetida.
Add the finely chopped onions and green chillies, and sauté until the onions become transparent.
Add the finely chopped tomatoes, turmeric powder, red chilli powder, and salt. Cook until the tomatoes become mushy.
Add the cooked rice to the tomato mixture and mix well to combine.
Garnish with curry leaves.
Serve hot with plain yogurt or cucumber raita.
