olive oil

1 tablespoons

cloves garlic, minced


onion, diced


cherry tomatoes, halved

2 cups

dried oregano

1 teaspoon

red pepper flakes

1/2 teaspoon

Salt and pepper, to taste

fresh basil leaves


vegetable broth

2 cups

penne pasta

1 cup

freshly grated Parmesan cheese

1/4 cup



Step 1:

Heat the olive oil in a large skillet over medium heat. Add the garlic and onion and cook until softened, about 5 minutes.

Step 2:

Add the cherry tomatoes, oregano, basil, red pepper flakes, salt, and pepper. Cook for another 5 minutes.

Step 3:

Add the vegetable broth and bring to a simmer. Simmer for 10 minutes.

Step 4:

Meanwhile, cook the penne pasta according to package instructions.

Step 5:

Once the sauce has simmered, add the cooked pasta and stir to combine.

Step 6:

Serve the pasta with freshly grated Parmesan cheese. Enjoy!
