Wash and peel the tinde and cut into small cubes.
Heat oil in a pan and add cumin seeds, mustard seeds and fenugreek seeds.
When the seeds start to crackle, add the tinde cubes and stir-fry for a few minutes.
Add turmeric powder, red chilli powder, coriander powder and garam masala and mix well.
Add the chopped green chillies and coriander leaves and mix.
Add salt to taste and mix.
Cover the pan and cook on low heat for 10-15 minutes or until the tinde is cooked.
Serve hot with chapatis or rice.
