Soak the tamarind pulp in 1 cup of warm water for 15 minutes.
Heat oil in a pan and add mustard seeds, cumin seeds, urad dal, chana dal, asafoetida, and curry leaves.
Once the seeds start to splutter, add the turmeric powder, red chilli powder, coriander powder, and garam masala.
Add the soaked tamarind pulp and jaggery and mix well.
Add the washed rice and salt to taste and mix well.
Add 2 cups of water and bring it to a boil.
Reduce the heat and cover the pan with a lid.
Cook for 15 minutes or until the rice is cooked.
Serve hot with your favorite accompaniment.
