Preheat the oven to 350°F (175°C). Spread the sesame seeds on a shallow baking tray and roast, shaking frequently, until fragrant, about 10 minutes. Do not allow to brown.
Cool for a couple of minutes and pour sesame seeds into food processor.
Add 2 tablespoons of oil.
Process to a smooth paste, adding more oil if needed.
Place the tahini paste in an airtight container. It can keep in the fridge for about a month.
