Heat oil in a pan and add mustard seeds, urad dal, chana dal and cumin seeds.
Once the seeds start to splutter, add the diced onion and sauté until it turns golden brown.
Add the diced tomato and sauté for a few minutes.
Add the cooked chickpeas, red chilli powder, turmeric powder, sambar powder and salt to taste.
Mix everything together and cook for a few minutes.
Add the chopped fresh coriander and grated coconut and mix everything together.
Serve the sundal hot.
