Suji Uttapam is a popular South Indian breakfast dish made with semolina, also known as suji or rava. It is a quick, easy, and nutritious dish which is often served with coconut chutney or sambar. It can also be customized with a mixture of finely chopped veggies on top, making it even more healthful and tasty.

In a bowl, mix together the rava, curd, and salt. Add water as needed to make a batter of pouring consistency. Let it rest for 15 minutes.
Add the finely chopped vegetables, cumin seeds, green chilli and grated ginger to the batter and mix well.
Heat a tawa or non-stick pan and pour a ladleful of the batter onto it. Spread it lightly.
Drizzle a little oil around the edges and let it cook on medium flame until the bottom starts to look cooked.
Flip the uttapam and cook the other side.
Serve hot with coconut chutney or sambar.
