Cut the top of the capsicums and remove the seeds.
In a pan, heat oil and add cumin seeds. Once the seeds start to splutter, add the mashed potatoes, peas, and crumbled paneer.
Add in the spices - garam masala, red chilli powder, and salt.
Sauté the mixture on medium heat for a couple of minutes. Let it cool.
Stuff the cooled mixture into the hollowed capsicums. Replace the top.
Grease the outer surface of the capsicums with some oil and roast in the oven at 180°C for around 20 minutes.
Serve the stuffed capsicums hot with mint chutney.
