Rinse the lentils in a bowl and add 2 cups of water.
Add the turmeric and bring to a boil.
Reduce the heat and simmer for 15 minutes or until the lentils are cooked.
Heat the oil in a pan over medium heat.
Add the cumin and mustard seeds and let them sizzle.
Add the ginger-garlic paste and sauté for a few seconds.
Add the onion and sauté until golden brown.
Add the tomatoes and cook until they are soft.
Add the coriander powder, red chili powder, and asafoetida and mix well.
Add the cooked lentils and mix well.
Add the spinach and mix well.
Add salt to taste and mix well.
Add the garam masala and sugar and mix well.
Cook for 5 minutes or until the spinach is cooked.
Garnish with cilantro and serve hot.
