Soak the soya chunks in warm water for 10 minutes.
Heat oil in a pan and add cumin seeds.
When the cumin seeds start to crackle, add the chopped onion and sauté until golden brown.
Add the ginger-garlic paste and sauté for a few seconds.
Add the chopped tomatoes and green chillies and sauté until the tomatoes are soft.
Add the coriander powder, turmeric powder, red chilli powder, garam masala, cumin powder, amchur powder and kasuri methi and mix well.
Add the soaked soya chunks and mix well.
Add salt to taste and mix well.
Add 1/2 cup of water and mix well.
Cover the pan and cook on low heat for 10 minutes.
Serve hot with chapatis or rice.
