Sooji Uttapam, also known as Rava Uttapam, is a traditional dish from South India. It's essentially a savory Indian pancake made from semolina or 'sooji'. Mix the sooji, curd, and water in a bowl and set it aside for 30 minutes.
Add the chopped vegetables and salt to the sooji batter and mix well.
Heat a non-stick pan over medium heat and lightly grease it with oil.
Pour a small amount of the batter onto the pan and spread it into a circular shape.
Cook on one side until golden brown, then flip and cook on the other side.
Serve the Sooji Uttapam hot with a side of coconut chutney.
