Slowly add the water and knead the dough until it is soft and pliable.
Divide the dough into small balls and roll each ball into a thin circle.
Cut the circles into small diamond shapes.
Heat the oil in a deep pan and fry the soan papdi until golden brown.
Drain the soan papdi on a paper towel and let cool.
Serve the soan papdi with your favorite chutney or dip. Enjoy!
