Soak the chickpeas overnight in enough water.
Drain the chickpeas and set aside.
Heat the olive oil in a pan over medium heat.
Add the cumin seeds and let them sizzle for a few seconds.
Add the coriander powder, turmeric powder, red chili powder, garam masala, amchur powder, salt, sugar, and ginger-garlic paste.
Stir and cook for a few minutes.
Add the onion, tomato, green chili, and cilantro.
Cook until the vegetables are soft and the spices are fragrant.
Add the chickpeas and stir to combine.
Add enough water to cover the chickpeas and bring to a boil.
Reduce the heat to low and simmer for 15-20 minutes, or until the chickpeas are tender.
Add the ghee and stir to combine.
Serve hot with roti or rice. Enjoy!
