Wash the baingan and slit them, keeping the stem intact.
Heat oil in a pan, add cumin and mustard seeds. Once they start to splutter, add asafoetida.
Add chopped onions and sauté until golden brown. Add ginger-garlic paste and sauté till the raw smell goes away.
Add turmeric powder, red chili powder, coriander powder, garam masala powder, salt, and tamarind pulp. Cook until the spices blend well.
Stuff the spice mixture into the baingan.
In the same pan, arrange the stuffed baingan. Cover and cook on a low flame till the baingan are soft and thoroughly cooked.
Serve hot with roti or rice.
