vegetable oil

large onion, finely chopped

garlic paste

curry powder

2 tablespoons

red chili powder

1 teaspoon

turmeric powder

1/2 teaspoon

Salt to taste

water

1/2 cup

Fresh coriander for garnish

Directions

Step 1:

Heat oil in a pan over medium heat.

Step 2:

Add onions and saute until they turn golden brown.

Step 3:

Add ginger-garlic paste and saute for a few minutes.

Step 4:

Add curry powder, red chili powder, turmeric powder, and salt. Saute until the spices are well cooked.

Step 5:

Add tomatoes and cook until they are soft.

Step 6:

Add the fish fillets to the pan and stir gently to coat with spices.

Step 7:

Add water and bring the curry to a simmer. Cover the pan and cook for 10-15 minutes or until the fish is cooked through.

Step 8:

Garnish with fresh coriander before serving. Serve the fish curry hot with rice or roti.
