large green bell peppers, seeded and cut into 1-inch cubes

cumin seeds

1 teaspoon

coriander powder

1 teaspoon

garam masala

1 teaspoon

red chili powder

1 teaspoon

turmeric powder

1/2 teaspoon

amchur powder

1/2 teaspoon

Salt to taste

Directions

Step 1:

Heat the oil in a large skillet over medium-high heat.

Step 2:

Add the cumin seeds and let them sizzle for a few seconds.

Step 3:

Add the potatoes and bell peppers and stir-fry for about 5 minutes, until the potatoes are lightly browned.

Step 4:

Add the coriander powder, garam masala, red chili powder, turmeric powder, amchur powder, and salt. Stir to combine.

Step 5:

Reduce the heat to low and cover the skillet. Cook for about 10 minutes, stirring occasionally, until the potatoes are tender.

Step 6:

Remove from the heat and stir in the cilantro. Serve hot.
