Shahi Paneer is a popular North Indian dish made from paneer (cottage cheese) in a thick, creamy and spicy gravy prepared with tomato, onion, and bell peppers. The Mughalai touch in the dish comes from its royal, rich gravy, made with a mixture of almonds and cashews, spiced with cloves, cinnamon and garnished with raisins. It is typically served with Indian breads like naan, roti or rice dishes like pulao. It is a good source of protein, calcium and provides other essential nutrients as well.

Blanch tomatoes, onion, garlic, ginger and cashews. Cool and grind to a smooth paste.
Heat ghee in a pan, add cumin seeds and let them crackle.
Add the ground paste and cook for about 10 minutes on medium heat.
Add Shahi Paneer masala, turmeric powder, red chilli powder and salt. Cook for another 5 minutes.
Stir in the paneer cubes and add a cup of water. Let it simmer for 10-15 minutes.
Pour over the cream and stir gently.
Garnish with fresh coriander leaves and serve hot with naan or rice.
