In a large bowl, mix together the puffed rice, mashed potatoes, onions, tomatoes, coriander leaves, green chillies, tamarind chutney, mint chutney and salt.
Take a small portion of the mixture and shape it into a round patty.
Place the patty on a plate and top it with some sev.
Heat a non-stick pan and place the patty on it.
Cook the patty on both sides until it is golden brown and crisp.
Serve the sev puri hot with some extra chutneys. Enjoy!
