In a large bowl, mix together the besan, red chilli powder, turmeric powder, ajwain, cumin seeds, coriander powder, garam masala, amchur, asafoetida, oil and salt.
Add enough water to make a thick batter.
Heat a non-stick pan over medium heat.
Pour a ladleful of the batter onto the pan and spread it evenly.
Cook for a few minutes until the sev is golden brown.
Flip the sev and cook the other side.
Remove from the pan and place on a plate.
Repeat the process with the remaining batter.
Serve the sev namkeen hot or cold. Enjoy!
