olive oil

onion, diced

cloves garlic, minced

red bell pepper, diced

yellow bell pepper, diced

zucchini, diced

yellow squash, diced

dried oregano

1 teaspoon

Salt and pepper, to taste

grated Parmesan cheese (optional)

Directions

Step 1:

Heat the olive oil in a large skillet over medium to high heat.

Step 2:

Add the onion and garlic and cook for two minutes.

Step 3:

Add the bell peppers, zucchini, and yellow squash and cook for a few more minutes.

Step 4:

Stir in the oregano, basil, salt, and pepper.

Step 5:

Sprinkle with Parmesan cheese and serve hot.
